What is Xató sauce


Xató is a typical sauce of the Penedès wine region of Catalonia, Spain. Xató is served with local escarole salads that are made using anchovies, tuna or arbequina.

Escarole lettuce. Escarole belongs to the endive family and is used raw in Xató salads.

There is a festival called Fiesta del Xató de Vilafranca in Vilafranca del Penedès near Barcelona which celebrates Xató.

The festival is part of the Ruta del Xató - Xató Route which takes place all over the Penedès region
