Gazpacho soup is a typical Spanish cold soup made of raw, blended vegetables. Gazpacho originates from Andalusia which is an autonomous community in the south of Spain.

Gazpacho is very popular in Spain and Portugal mostly during the hot summer months, because it is a light, healthy, cool and freshing dish or snack.

There are many varients but most gazpacho recipes typically include dry bread, tomato, cucumber, bell pepper, onion and garlic, olive oil, wine vinegar, water, and salt.
